Recipe Redux :: Vanilla Chai Smoothie

Today is my very first post as part of the Recipe Redux team of bloggers, bringing you monthly themed posts with a healthy twist! February’s theme is beverages, so today I’m showing you a delicious, healthy drink perfect for your morning wake-up or an evening sweet treat. Using ground spices, unsweetened almond milk, raw cashews, and pure maple syrup, my Vanilla Chai Smoothie can show you how easy it is to whip up a creamy, dairy-free, chai latte inspired smoothie at home! No barista necessary.

This Vanilla Chai Smoothie is a refreshing, cool take on the usual hot chai tea latte.  It’s a perfect balance of spicy and sweet, while also the perfect creamy thickness. The best thing about this chai inspired smoothie? It doesn’t come all sickeningly sweet and sugary like most coffeehouses make them – with pre-made mixes loaded with refined sugars, dairy, and artificial ingredients. Healthy fats from coconut oil and raw cashews will satisfy you and a brief sweetness from pure maple syrup will quiet your persistent sweet tooth’s calling.

This recipe would also be great if you warmed it up over the stove for a hot chai tea. It’s warm this week in Kansas City, so I’m kinda on a cool beverage kick. But if its freezing tomorrow, you know it, I’m heating this one up.

Vanilla Chai Smoothie
Serves 2

1.5 cup unsweetened almond milk
1/3 cup raw cashews, soaked in hot water for 10 minutes (can omit soaking, but it blends smoother)
1 tablespoon coconut oil
1.5 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1 teaspoon cacao powder
Dash of sea salt
3/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1 teaspoon ground nutmeg

Directions: Put all ingredients in a Vitamix or high-powered blender in the order listed, blend on high until smooth. Enjoy immediately, over ice for a greater chill, or even warmed up on the stovetop as a creamy hot beverage!

    Wow! This looks amazing …look at all the yummy ingredients to start your day off right. I know what you mean about the little warm spell we had the last few days…I’m in southern Illinois. But looks like snow soon. Ugh. Great reason to try this warm!

      Thanks, Amari! I love adding cashews into my smoothies sometimes for a nice subtle creaminess instead of using a banana, which adds that banana flavor that sometimes I don’t want.

      Hi Erica! You could definitely omit the coconut oil all together and it would be totally fine. Or you could add a few more cashews, substitute equal part unsweetened shredded coconut or equal part full fat coconut milk.
