Nowadays a food blog is incomplete without a standard green smoothie recipe. So, uh, I guess this means Chard in Charge is now complete?
Yeah, yeah, yeah. We all know green smoothies are a great way to get in your nutrient dense leafy greens, but sometimes they are just plain nasty. I’ve been there too many times.
I’m not going to tell you that I drink one every morning or love to blend my kale. I’d be lying if I said that. I feel compelled to tell you that I’ve had an awful run with green smoothies. Maybe it was my old blender that left behind tiny bits of spinach to get caught in my teeth. Or maybe it was the excess of chia seeds that kicked my gag reflex in as if I was drinking a glass full of half-melted glue sticks. You get it. Clearly the green smoothie trend has never been my thing…
Until one morning I put on my big girl pants and conquered the green smoothie madness! And it was good. Really, reaaaaally good. So good I have to share it with you all. If you follow me on Instagram you already saw it there first…you lucky duck, you. Why is this green smoothie “the perfect”green smoothie? Because I’m a genius, of course! No, not really. The ingredients create the magic themselves. Avocado and banana make it creamy, while dates and frozen mango add sweetness to balance out the slight bite of fresh greens. So why should you trust this recipe? I’ve spent many mornings pouring half drank glasses of failed green smoothie down the kitchen sink. I know a bad green smoothie when I taste one, and this is definitely, definitely not a failure. It’s a keeper!
So if your freaked out by green smoothies, let this one be your first. A high powered blender is my preferred tool of choice, however a classic $40 blender will do just fine. Just be sure to blend it a little longer so your smoothie isn’t gritty. No one wants to chew their smoothie (although chewing helps stimulate digestive enzymes). I also recommend starting out with baby spinach or chard because they offer a more mild flavor than their adult form.
- 1 cup coconut water
- 1 ripe banana
- 1 avocado
- 1/2 cup frozen mango (frozen peaches or pineapple or any combination of these options work great!)
- 3 medjool dates, pitted
- 1 tablespoon tahini or almond butter
- 2 handfuls of spinach or chard (about 2 cups)
- Add all ingredients into a blender, in the order listed. Secure lid, blend on high until smooth.
Drink this right away, as it will thicken as it sits. If it's too thick, add a bit of water to make it thinner to your desired consistency.
