After last night’s marathon snacking (so yum!), I think we all – myself included – need to reset, rebalance, and start our week off on a nourishing note. My Lemon Zinger Spinach Smoothie is incredibly refreshing, hydrating, and even low sugar as it is sweetened mainly by stevia extract. This is a great morning smoothie to wake up your digestive system after a night’s fasting sleep and it is full of healthy fats and fiber to provide stable energy while keeping you satisfied longer.
The key ingredients of the “zing” are fresh lemon and a hint of apple cider vinegar. Lemon juice creates balancing alkalinity in the body contrary to it’s sour or acidic taste, while apple cider vinegar provides a probiotic boost. Don’t be afraid of the tartness in this greenie. Greg, my recipe tester and hand model extraordinaire, enjoyed the refreshing change from a typical sweet and fruity smoothie. Ready, set, blend!
Wanna hear my take on the green smoothie trend? Well, you have no choice..so here: I am not a fan of all the crazy-hard-to-find ingredients that are all the rage. Like spirulina, chorella, and whatever other micro algae is hot right now. They sound kind of freaky (anyone else with me?) and cost practically a day’s worth of pay. Once I bought some fancy schmancy green supplement for fifty bucks, only to find it tasted (smelt and looked) like LEGIT pond scum. Even my berries wouldn’t mask the stench wafting from my glass. Maybe these mineral rich supplements are your thing (and go you for that!) but I think I’ll get my nutrients elsewhere.
What I love about THIS green spinach smoothie is that you probably already have all of the ingredients on hand in your produce bowl. Heck, yeah! No need to buy something extra or seek out that weird expensive supplement.
As a word of advice, did you know that lemons should be kept at room temperature and NOT stored in the fridge? This one stumped me too. To learn more about the awesomeness that is a lemon, check out my popular post 5 Ways to Use a Lemon.
How do you NOT want to drink that goodness? I mean, look at that beauty. Pure, raw, unadulterated beauty.
On a side note: today is the first day of my new job! I haven’t really shared it yet, because I’m terrified. But I’m trying to channel my inner fear into excitement; excitement for stepping out of my comfort zone (ah!), leaving a good but easy job behind (oh crap!), and starting a new challenge to do, learn, and grow more as a dietitian (the opportunity). Have you ever felt completely scared to start a new job? HOW DID YOU OVERCOME IT? What if I am terrible at this job? What if I flop entirely and my employer A) hates me B) fires me, or C) I regret leaving my last job and D) end up working 60 hours a week because it’s THAT hard?! In the end, I know it’ll be worth it, even if it starts out a bit rocky. Right? Right? Ah, sheesh…
