Made with creamy kefir, frozen banana, your favorite peanut butter and handfuls of spinach…plus a few extra add-in’s that don’t require special herbal blends or hard-to-find ingredients.
I thought I was going to skate by without over indulging this holiday season, but then last night happened. I had a serious sweet tooth hankering for something I haven’t eaten in YEARS. Pillsbury Slice ‘N Bake Sugar Cookies. You know the kind that has the little green Christmas tree image in the center? Yeah, those. So my dear husband went out in search of some while I continued to sit my lazy butt on the couch watching Frozen. I hadn’t seen it before and I actually kinda liked it. When G returned from the store, he had a bit of sad news: our grocery store doesn’t sell the holiday slice ‘n bake sugar cookies! Blasphemy, I tell ya! We settled for the regular Pillsbury sugar cookie dough and went to bed with sugar-full bellies.
They were disgustingly good. It was a glorious night.
But it’s a new day and I’m all about that b-a-l-a-n-c-e. One of the easiest ways for me to get back on track is with a simple green spinach smoothie. This is my go-to recipe I’ve been blending for years and I’m happy to report that my husband knows how to make it all on his own (proud dietitian wife!). We usually vary it a little with the type of liquid or nut butter, but the general ratio stays the same:
1 cup liquid + 2 Tbsp your favorite nut butter + 1 frozen banana + 2 handfuls of spinach
For the creamiest version, I love to use kefir. Plus, during winter time it’s a great way to add in some probiotics to help boost the immune system. And all that Vitamin C, folate, and choline from spinach…goodness in a glass! - 1 cup plain kefir
- 1-2 frozen bananas
- 2 Tbsp peanut butter
- 2 tsp raw, shelled hemp seeds
- 1/2 tsp ground cinnamon
- 2 heaping handfuls baby spinach
- Add all ingredients into a blender in the order listed. Secure lid and blend on high until creamy.
